What's Cookin'?




Tonight I was able to try a new recipe from the Almost Homemade cookbook by the Gooseberry patch. It was a tasty and very simple chicken dish to put together, and we are definitely going to be making this one again! Even if you're not a big zucchini fan, it's really yummy! Here's the recipe, we hope you enjoy:


Zucchini- Stuffed Chicken

2 T. olive oil

2 C. zucchini, shredded (I diced ours)

1 onion, finely chopped

6 oz pkg. herb- flavored stuffing mix

3/4 C. water

1 C. shredded Italian-style cheese blend

8 chicken leg quarters (I used 5 whole chicken breasts)

Heat oil in a large skillet over medium heat. Add zucchini and onion; cook and stir for 5 minutes, or until onion is tender. Remove from heat. Stir in stuffing mix, water, and cheese until well blended; cover and set aside.

Carefully loosen skin on leg quarters to form a pocket (or split chicken breasts to form a pocket); fill evenly with stuffing mixture. Arrange in a greased shallow baking pan. Bake at 400 degrees for 45 to 50 minutes, or until chicken juices run clear when pierced. Enjoy!

P.S.- Don't forget the vinegar on your greens! :)

Allie, what a delicious looking meal! Thanks for sharing the recipe. We just took some zucchini down from the freezer yesterday to help empty it for the coming summer veggies, and Hannah made vegetable lasagna with it-I always love it. In fact, I thought about posting a pic - maybe I will.

Oh YUM! I am going to save that recipe. I have actually thought about getting that cookbook. Do they have pictures of their recipes?

Melina- No, this cookbook does not have pictures. It would be great if it did...that way you could see what it's supposed to look like. :) This book does have great little tips on the bottom of each page though, along with great little decorating ideas. It's quite neat! ~Alli
